The key is temperature control. You rarely need to use your hob's highest heat setting. Instead, allow your frying pan to heat gradually and give your food enough time to develop a proper sear. Place the empty frying pan over a low to medium heat and allow it to warm gradually. This gives you greater control over the temperature and reduces the risk of food burning or sticking. Avoid putting your stainless steel pan straight onto the highest heat setting. A sudden and extreme change in temperature can cause the pan to warp. Instead, increase the heat gradually until the pan reaches the right temperature.
